COCOA
Cocoa beans are fermented, dried, roasted and cracked into nibs. These nibs are pressed under hydraulic pressure to remove 75% of its cocoa butter. This leaves behind chocolate liquor in a paste form which is then dried and ground into unsweetened cocoa powder.
Cocoa Liquor / mass is pure cocoa mass in a solid or semi solid form . This is produced from cocoa beans that have been fermented , dried , roasted and separated from their skins . The beans are ground into cocoa mass / paste and then melted to become liquor . This liquor is then either separated into cocoa solids and cocoa butter or cooled and moulded into blocks of raw chocolate.
Cocoa butter is a pale-yellow edible vegetable fat which is cold pressed out of cocoa beans . Cocoa butter has a cocoa flavour and aroma which melts at body temperature and gives chocolate its unique mouthfeel .
Couverture is a name given to a certain class of high quality chocolate which contains a higher percentage of cocoa butter than baking or eating chocolate. All chocolate bars contain mainly the same base ingredients such as cocoa powder , cocoa butter , sugar and milk powde . Whereas , a couverture contains a higher percentage of cocoa butter compared to other ingredients . This additional cocoa butter , combined with proper tempering, gives the chocolate more sheen , a firmer snap when broken and a creamy mellow flavour .
Compound is made up of cocoa powder , edible vegetable fat , sugar and milk powder . It is a low cost alternative to real chocolate since it uses vegetable fat instead of the expensive cocoa butter.

Dairy
Powdered milk , also called as milk powder is a manufactured dairy product made by evaporating milk to dryness . One purpose of drying milk is to preserve it as milk powder because it has a far longer shelf life as compared to liquid milk and it does not need to be refrigerated due to its low moisture content . Another purpose is to reduce its bulk for the economy of transportation . The different types of milk powders are Fat Filled Milk Powder (FFMP) , Skimmed Milk Powder (SMP) , Full Cream Milk Powder (FCMP) , Whey Powder , Buttermilk powder etc
Cheese is a dairy product that is derived from milk and produced in wide ranges of flavours , texture and forms by coagulation of the milk protein casein . It comprises of proteins and fat from the milk . During production , the milk is usually acidified and the enzymes of rennet are added to cause the milk proteins to coagulate . The solids i.e. curd are separated from the liquid i.e. whey and pressed into final form . There are various types of cheese produced in several countries . Their styles , textures and flavours depend on the origin of milk , whether they have been pasteurized , the butterfat content , the bacteria and mold , the processing and how long they have been aged for.
Butter is a dairy product made from the fat and protein components of milk. It is a semi solid emulsion at room temperature which consists of approximately 80% butter fat . It is used at room temperature as a spread , melted as a condiment and used as an ingredient in baking , sauce making , pan frying and other cooking procedures . It is made by churning milk to separate the fat globules from the buttermilk . Salt and food colourings are sometimes added to butter.
Casein is the chief protein in milk and the essential ingredient of cheese . In its pure form , it is an amorphous white solid which is tasteless and odourless , while its commercial type is slightly yellow with a pleasing odour. Cow’s milk contains about 3% casein . Casein is a complete protein which means it contains all of the amino acids required by our bodies to function . Commercial casein is made by one of the two methods which is precipitation by acid which produces acid casein or coagulation by rennet which produces rennet casein . The precipitated casein curd is separated from the whey , then washed and dried . The water-soluble derivatives of acid caseins which are produced by reaction with alkalis are called caseinates . Casein is used in prepared foods , medicines , dietary supplements and cosmetics . Industrial applications of casein include paper coatings , glues , paints , plastics and man-made fibres.
